The U.S. has become one of the unhealthiest of the developed countries. Most adults in their 40s, 50s and older are on various medications to lower their blood pressure and cholesterol or to manage their diabetes. They may have had major surgery to replace clogged arteries, to remove diseased or cancerous parts of their bodies or to reduce the size of their stomachs. Many have gone on unhealthy diets where they lost weight in the short term, but usually gained it back, and more, after going off the diet.
For the first time in our history, the life expectancy of our children is shorter than their parents. Obesity, heart disease, diabetes and other “adult” diseases are showing up in our children at younger and younger ages.
Type 2 diabetes, heart disease, obesity and one third to two thirds of cancers are directly linked to our unhealthy Standard American Diets (SAD). Our diet is killing us!
It doesn’t have to be this way. We have amazing self-healing bodies that, when given nutritious, healthy food, can survive and even reverse many of the serious and debilitating diseases suffered by most of today’s Americans.

Class Recipe Rating Summary

Part of the homework assignment for the April-June, 2010 class series was to make 2 vegan recipes each week and then rate them on a scale of 1-5 (1=didn't like it, 5=utterly scrumptious).
The recipes and ratings were compiled into a spreadsheet and posted onto the website. (Only recipes which had a clear source reference and a rating were included in the summary.) To view the summary of the Cancer Project and Diabetes classes, click on the Summary button.
